In fact, you’d be hard-pressed to find the dish served in Mexico today. Looking for a bowl of chili in Mexico would likely require you to travel to an area that caters to American tourists as it’s a meal that isn’t commonly passed down from generation to generation in Mexico.

As one culinary expert put it after searching for chili in Mexico, they call it diccionario de mejicanismos—which roughly translates to “detestable food passing itself off as Mexican, sold in the U.S.”

So then, where did it originate?

There are several different stories commonly associated with the origins of chili. Most of the earliest accounts trace back to around the 17th century, where chili was thought to be a common meal for some of America’s poorest people as it supplemented a lack of expensive meat with an abundance of affordable peppers.

This early version of chili was also reportedly inspired by a Spanish nun who ended up in the United States. Sister Mary of Agreda, or “lady in blue” as she was called, brought her Spanish heritage to the United States and Southewestern Native Americans by sharing her recipe for chili.

The first recipe called for antelope or deer meat, tomatoes, onions, and chile peppers. It’s safe to say that our modern recipes have evolved a little bit!

In the 18th century, there are reports of people visiting Texas and being exposed to a spicy “Spanish” stew which is now understood to be chili.
